Soba Buckwheat Panna Cotta

Ingredients


Soba Tea


Panna Cotta

  • 2 C heavy cream
  • 1 ½ C Soba Tea
  • 1 package gelatin
  • ½ C honey

Soba Jelly

  • 1 C Soba Tea
  • 1 package gelatin
  • 1 TBSP honey

Directions

  1. Steep dry Soba Buckwheat Elixir in boiling water for at least an hour. Sieve the Soba Buckwheat Elixir from the steeped tea.  
  2. In a small saucepan, add 2 TBSP of soba tea and sprinkle gelatin on top. Let sit for 5 minutes to allow the gelatin to soften. Then, heat on low until the gelatin melts and set aside.  
  3. In a large saucepan, heat cream, remaining steeped tea and honey on media until just about to boil. Add gelatin mixture and stir. 
  4. Divide mixture equally into eight ramekins or glasses. Refrigerate overnight. 
  5. To make the jelly layer, add two tablespoons of soba tea to a small saucepan and sprinkle gelatin on top. Let sit for 5 minutes to allow the gelatin to soften. Then, heat on low until the gelatin melts and set aside.  
  6. In a medium saucepan, boil remaining soba tea and honey together. Add gelatin and stir. 
  7. Allow soba jelly to come to room temperature. Pour jelly mixture over the top of the chilled panna cotta with the backside of a spoon for even dispersal. 
  8. Chill for at least 4 hours or overnight. 
  9. Before serving, top with dry Soba Buckwheat Elixir as a garnish and enjoy!
